Bacon-wrapped Mushrooms

This past weekend I conducted a series of demonstration cooks in Eastern Washington. One of the items I served were bacon-wrapped mushrooms. Easy to make, and wonderfully tasty! Enjoy them with your favorite summer refresher.

Ingredients: 1/2-1 lbs. large, white mushrooms, 1 package of thick sliced bacon, your favorite seasoning mixture, wooden toothpicks.

Preparation: Wash and rinse mushrooms. Allow to drain and dry. Take the bacon and cut each strip in half (horizontally) to create 2 pieces. Wrap each mushroom with one piece of bacon, using one wooden toothpick to secure to mushroom. Once made up, lightly sprinkle with your favorite barbecue rub or seasoning.

Grill over high heat until bacon is thoroughly cooked-approximately 8-12 minutes depending on how hot your grill gets. You should turn the mushrooms at least once while cooking. Remove and serve. (Optional dip: Ranch or Blu Cheese dressing).
