Mike's Raspberry Pie Recipe

A very popular item I have given out on my show for many years in July is my favorite (and easy to make) raspberry pie.  We are so fortunate to live in this area with the abundance of berries and other fruits and vegetables, we need to enjoy them when they are ‘in' season.  This recipe was given to me some years ago and has been a traditional summer dessert in our family.

1 qt fresh raspberries
1 ½ cup water
1 ½ cup sugar
4 tbsp corn starch
1 pkg raspberry Jell-O® (3 oz)

Put fresh raspberries in a pie shell
Mix together the sugar, corn starch, and ½ cup water
Boil 1 cup water and add Jell-O; mix until dissolved
Add the sugar and corn starch mixture to the Jell-O mixture.  Stir this together and let it cool.  Pour over raspberries in the pie shell, chill for a couple of hours and serve.

Several years after I gave this out, a listener called and gave me this quick and easy pie shell recipe.

1 cup flour
1 stick butter
¼ cup powdered sugar

Mix this together and pat into pie pan.  Bake at 350º for 10-15 minutes or until brown.
