Local Bakers Prepare for Passover and Easter

(PORTLAND, OREGON  Pastry chefs at Elephants Delicatessen are doing double time in the kitchen theses days.  They are busy making traditional and not so traditional treats for Jewish Passover and  Easter.  Nicholas Doughty Store Director in Northwest Portland  says,  “Customers love color this is the time of year we use pastels to spark up bakery items.”

Big for Easter is the traditional Hot Cross Buns.  French Macaroons  are a hugephoto Elephants 2 hit.  They’re colorful almost bite sized treats.  During this whole next week at least 250 per day will walk out the door.  That’s just at one location.  A few years ago  bakers  reinvented the cupcake kind of a reminder and throw back to the 60′s and 70′s Easter Basket with the plastic green grass.  These cupcakes  are a rich chocolate and have coconut that’s tinted green topped with colorful jelly beans.  It’s a huge hit with the kids.

Last but not least is the flour-less chocolate  cake . it’s perfect for Passover when everything in unleavened.  Espresso, almond flour, lots of butter and rich chocolate make this very popular for holiday tables.
