Grilled Vegetable Packets

Grilled Vegetable Packet—got a call the other day from my buddy Bryan Griggs, wanting to know about cooking potatoes on his grill. Said, sure-do it all the time!  One of the easiest ways to do this is to quarter your potatoes, season them, wrap  in foil and cook for between 45-60 minutes until they’re done. But then! I got this idea for a potato packet!

Ingredients:  I’m going to give you the basics—you decide how many you need of each. Can pretty much use any combination of fresh veggies you desire—here’s a short list to get you started:

● Yukon Gold and Red potatoes—washed and quartered

● Medium sized white onion—quartered

● Yellow, orange or red bell pepper, seeded and sliced into strips

  Baby carrots

 In a foil pouch big enough to hold the veggies, sprinkle a little olive oil, sea salt and pepper. Close foil, and grill on high for approx. 45-60 minutes. Remove from grill, open top and allow steam to escape—serve.
